The Three Roasts
Milds: Mild roasts can be difficult to obtain because of the danger of under roasting, resulting in a coffee that tastes tart and weak and is highly undesirable. Well-roasted, mild coffees are a light-brown color, will be dry and have a tart smell. And, the distinctive crevice in the bean will just be beginning to form.
Mediums: Medium roasts are a medium brown color and are lighter in weight with a more developed crevice. The surface of the bean will be slightly shiny as the oils have started to come to the surface. The roasted beans have a pleasant and rich aroma.
Darks: Dark roasts are also difficult to do well because if they are under-roasted, they are mediums’ and if over roasted, they taste burnt. The color should be deep chocolate brown with a very shiny surface. Dark roasts will have a fully developed crevice having a strong, somewhat smoky aroma. Dark roasts are suitable for espresso.
There are many descriptive terms for various roasts, but they all fall into one of these three categories.
Which Roast is Best?
That is a matter of individual taste. Find something that you like, learn the region of origin of the coffee and try others from that region and roast type. Enjoy !
